Blueberry Oatmeal Banana Pancakes

Looking for a healthy dish for breakfast? Try these delicious and easy-to-prepare blueberry oatmeal banana pancakes.

Ingredients

  • 1 1/2 cup oats

  • 2 bananas

  • 2 eggs

  • 1/2 cup homemade almond milk

  • 1/4 tsp vanilla

  • 1/2 tsp ground cinnamon

  • 1 tsp baking powder

  • 1/8 tsp salt

  • 1/2 cup frozen (or fresh) blueberries

  • Coconut oil (for cooking)

Instructions

  1. Blend all the ingredients except for the blueberries, for about 1 minute, or until the batter is smooth.

  2. Then add the blueberries and pulse for a few seconds to break them up.

  3. Grease a non-stick pan (or a griddle) with coconut oil.

  4. Pour a few ounces at at time on to the pan or griddle.

  5. Flip over after 2-3 minutes or when the top is golden-brown with bubbles at the edges.

This recipe makes 9-10 pancakes.

Planning Ahead: Freeze Your Pancakes

We like to make a large batch of these pancakes and freeze them. Then the kids can grab a quick breakfast a couple mornings per week. Just freeze them on a baking sheet until they are firm, then throw them in a freezer-safe container or bag. They will hold for a couple of months.
