Want an all-in-one healthy entrée that will fill your family’s stomachs and satisfy their dinnertime urges? These 5-ingredient Tamari chicken skewers are not only super healthy but also really quick to prepare. The chicken comes out juicy and tender and the peppers and onions provide a satisfying crunch.

We like to use hormone-free, antibiotic-free chicken. Also, the Tamari sauce has no preservatives or additives.

Chicken Skewer Ingredients

  • 2 chicken breasts, deboned

  • 3 halves of a variety of different-colored sweet bell peppers

  • 1 medium red onion

  • 8 ounces of baby bella (crimini) or white button mushrooms

  • 2 Tbsp Tamari sauce (low sodium)

  • 2 Tbsp Avocado oil

You will also need wooden skewers, unbleached parchment paper and a baking tray.

Instructions

  1. Cut two chicken breasts into 1-inch cubes.

  2. Dice onions, colored sweet peppers and mushrooms. (You can add zucchini if you'd like).

  3. Stick them onto the skewers, alternating the colors.

  4. Place them on an oven tray, over unbleached parchment paper.

  5. Drizzle avocado oil and Tamari sauce onto the skewers. (You can also use coconut aminos, low-sodium soy sauce or your choice of any other sauce.)

  6. Bake in the oven for 20 minutes at 350°F or until chicken is tender and juicy.

These chicken skewers go very well as a main course with the leek and chard frittata as a side dish.
