Grilled Chicken Salad One-Pot Meal

Craving a simple summer salad for dinner? Try this Grilled Chicken Salad One-Pot Meal with a zesty Homemade Dressing. With this type of dish, there is no need for side dishes, so you can get into and out of the kitchen quickly. That leaves more time to spend with your spouse, your kids or yourself.

Make Grilled Chicken with a Fresh Green Salad

The salad is so easy to make: Simply plug in a George Foreman Grill and let it heat up for a few minutes. Then do the following:

  1. Marinate the chicken with a mixture of salt, garlic powder and dried thyme (you can also use paprika or oregano) in avocado oil.

  2. Grill the chicken in a George Foreman Grill.

  3. Prepare a green salad. We used a bag of organic mixed greens from the farmers market, some colorful cherry tomatoes, English cucumber, hearts of palm and boiled corn.

Now for the fun part: you can make your own dressing!

Make Your Own Homemade Salad Dressing

I love making my own salad dressings, for two reasons. First, nearly all store-bought dressings contain a ton of sodium, additives and preservatives that are, frankly, unnecessary. Second, making my own dressings means that I can flavor my salads as I choose.

My basic dressing is a tablespoon of extra-virgin olive oil (abbreviated “EVOO” by "food bloggers) mixed with a tablespoon of apple cider vinegar (abbreviated “ACV” by food bloggers). This is an excellent go-to dressing when I am in a pinch. However, it’s also fun to add more flavors. This one is my current fave because it contains an oil, an acid and salty, sweet and tangy flavors.

Salad Dressing Ingredients

  • 2 Tbsp EVOO

  • 1 1/2 Tbsp ACV

  • 1 tsp low-sodium organic Tamari sauce

  • 1/4 tsp chickpea Miso paste

  • 1 tsp yellow mustard

  • 1 tsp raw honey (you could also just use 2 tsp honey mustard in place of the mustard and the honey)

  • A pinch off garlic powder (optional)

Mix the dressing ingredients well, then toss it onto the salad.
