Watermelon Blueberry Smoothie

Summers are for watermelon and blueberries. If you can get a smoothie out of them, well, that's even better!

One of the greatest joys of summer for our family is sloppily eating big, juicy watermelons, as sweet juice runs down our faces.

Yellow Watermelon Nutrients

Ever wonder where yellow watermelons come from? I used to think that they were a recent cultivation innovation. However, they've apparently been cultivated in Africa for over 5,000 years!

Yellow watermelons contains tons of antioxidant goodness, due to the high amounts of beta-carotene and vitamin C in the fruit. This is in contrast to the antioxidant lycopene that gives red watemelons their color.

How To Eat A Watermelon

Besides eating them with your hands, how else can you eat a watermelon?

Four ways that I can think of off the top of my head:

  • Blend them into juice and add some ice cubes

  • Blend them, then combine with another fruit and freeze into popsicles

  • Combine them into a cool refreshing salad with feta, mint and grapes

  • Incorporate them into a smoothie

Make a Watermelon Blueberry Smoothie

I wanted to incorporate yellow watermelon into my breakfast routine, so I made up a deliciously refreshing yet super simple Watermelon Blueberry smoothie.

Ingredients

The plant milk base:

  • 1/4 cup hulled hemp seeds

  • 1 cup water

  • 3 Deglet Noor dates (or 1-2 Medjool dates)

The rest of it:

  • 2 cups watermelon (yellow or red)

  • 1 cup frozen blueberries

  • 1/2 ripe Haas avocado

  • 1 tsp chia seeds

  • 3 ice cubes

Instructions

Blend for 45-60 seconds in a high-speed blender (adding the ice about 10-15 second prior to the end of the blending).
