Blueberry Oatmeal Banana Pancakes

Ingredients
1 1/2 cup oats
2 bananas
2 eggs
1/2 cup homemade almond milk
1/4 tsp vanilla
1/2 tsp ground cinnamon
1 tsp baking powder
1/8 tsp salt
1/2 cup frozen (or fresh) blueberries
Coconut oil (for cooking)
Instructions
Blend all the ingredients except for the blueberries, for about 1 minute, or until the batter is smooth.
Then add the blueberries and pulse for a few seconds to break them up.
Grease a non-stick pan (or a griddle) with coconut oil.
Pour a few ounces at at time on to the pan or griddle.
Flip over after 2-3 minutes or when the top is golden-brown with bubbles at the edges.
This recipe makes 9-10 pancakes.
Planning Ahead: Freeze Your Pancakes
We like to make a large batch of these pancakes and freeze them. Then the kids can grab a quick breakfast a couple mornings per week. Just freeze them on a baking sheet until they are firm, then throw them in a freezer-safe container or bag. They will hold for a couple of months.
