Keto, Paleo and Gluten-Free Passover Sliders

Passover only lasts for 8 days. But if you already miss a good burger on a bun, you will love these kosher for Passover slider sandwiches. Plus, these delicious sliders are keto, paleo and gluten free!

The buns are made of almond flour and psyllium husk. It is the psyllium in these buns that mimics the texture of real bread.

What is Psyllium Husk?

Psyllium is the soluble, prebiotic fiber derived from the plantago ovata herb. Its copious health benefits include helping to lower blood cholesterol levels, relieving constipation and diarrhea and regulating blood sugar levels in diabetes sufferers. (Psyllium is also the bulk-forming laxative ingredient in Metamucil.)

Why is Psyllium Used in Keto and Gluten-Free Baking?

In gluten-free baking, psyllium acts as a binding agent. When combine with water, it forms a tough gel that adds a gluten-like elasticity to dough. This is especially useful when baking with low-carb flours such as almond and coconut, that tend crumble easily on their own. It works well to retain both moisture and structure. Psyllium is often used as a binding agent in place of guar gum and xanthan gum.

Ingredients

Buns

  • 3/4 cup almond flour

  • 3 Tbsp psyllium powder (you can also substitute ground flaxseeds)

  • 2 tsp baking powder

  • 1 tsp sea salt

  • 1 cup boiling water

  • 3 egg whites

  • Splash of apple cider vinegar

Hamburgers

  • 1 egg

  • 1/4 cup almond flour

  • 1 tsp ground cumin (or to taste)

  • 1/4 salt (or to taste)

  • 1 lb grass-fed ground beef

Veggies (amounts are to taste)

  • Approx. 1 cup romaine lettuce, shredded

  • Apple cider vinegar

  • Extra virgin olive oil

  • Pinch of salt

  • 1 avocado, sliced approx. 1/8 inch thick

Instructions

Buns

  1. Preheat oven to 350°F.

  2. Mix almond flour, psyllium powder, baking powder and salt into a mixing bowl.

  3. Combine vinegar and egg whites. Beat by hand for 30 seconds .

  4. Add egg mixture to dry ingredients and mix.

  5. Boil the water and add to the mixture. Mix well.

  6. Wet your hands and divide the mixture into 6-8 buns.

  7. Place the buns on a baking sheet lined with parchment paper.

  8. Bake for 50 to 60 minutes, depending on how large the rolls are. They are done when you hear a hollow sound after gently tapping the surface.

Hamburgers

  1. Preheat oven to 350°F.

  2. In a small bowl, stir all the ingredients together.

  3. Form ground beef mixture into 1 1/2 inch-wide patties.

  4. Place on a baking pan lined with parchment paper.

  5. Bake for 20-25 minutes, or until no longer pink.

Veggies

  1. Mix the lettuce, oil, vinegar and salt.

  2. Serve.

The texture of these baked buns is the closest that I’ve seen anything come to feeling like real bread on Passover. They remind me a bit of the matzo rolls that my mother makes on Passover, but without all the refined white flour. The mini-hamburgers add a juiciness and the lettuce and avocado round out this delicious and nutritiously well-rounded meal.

As you can see, we had a lot of fun with these faux sliders. 🍔 They are also terrific for digestion during days when you eat a lot of matzo.

Other Uses for the Buns

These buns are not just for eating with burgers. You could also eat them as you would a matzo roll or morning muffin. Fill them with any of the following:

  • Guacamole

  • Butter and salt

  • Coconut oil and salt

  • Raw honey
